Cut onions into 2 inch rings and cook in salted water 10 to 15 minutes. Drain and put half in two quart casserole. Add half of the cubed cheese and 1/2 the croutons in layers. Repeat layers without croutons. Melt butter, blend in flour & milk and cook until thick. Add salt and pepper to taste. Add a little to egg and stir together. Pour over onions and top with croutons.
